Thinking Outside the Egg – Mexican Deviled Eggs

Leftover hardboiled eggs from Easter? You will love this South-of the border version of deviled eggs. One whole egg is only 70 calories. The whites are a lean protein source, and the yolk is packed with beta carotene and other fat soluble vitamins. Choose free range omega 3 enriched to get extra essential fatty acids.

6 large hardboiled eggs, peeled
1/2 jalapeno pepper, seeded, minced
3 tbsp mayonnaise
2 tbsp sour cream
2 tbsp finely chopped green onion
1/2 tsp ground cumin
Zest of 1/2 lime
1/2 tsp salt
Fresh ground pepper to taste
3 tbsp chopped cilantro or parsley
Paprika, for garnish

-Slice eggs crosswise, carefully removing yolks, and mix well in a medium bowl with remaining ingredients, reserving cilantro and paprika

-Spoon or pipe mixture into egg white halves, dust with paprika, and garnish with cilantro
