Consequence to this cool, wet summer in New Jersey, fabulously plump and sweet blueberries showed up in my latest organic produce share from Purple Dragon.
Thick, creamy, and naturally sweet, this is the perfect reboot to start your day.
You can use frozen mango, if you do not have fresh, and add a small handful of rolled oats, if desired, to make it even creamier.
Blueberries are high in anthocyanins, an anti-aging antioxidant. Fruits containing this purple pigment (such as blueberries, cherries, cranberries, plums and pomegranates) protect DNA against UV rays, stabilize collagen, and repair sun damage.
Puree in a blender until smooth:
1-1/2 cups reduced sugar almond milk
1 cup fresh blueberries
1 mango, peeled, pitted
2 tbsp ground flax meal
8 ice cubes
1 packet stevia (optional)
