Spicy Sesame Napa Cabbage
Serves 4
Cabbage is in the cruciferous vegetable family along with kale, Brussels sprouts, bok choy and cauliflower. Rich in beta-carotene, vitamin K, fiber, and folate, this dish will make a healthy addition to your St. Patty’s Day fare. Napa cabbage is tender compared to other varieties, and can be eaten raw or cooked. Peel off the larger outer leaves of the Napa cabbage head, reserve for use in lettuce wraps for a low carb meal, and shred the inner portion for this stir fry.
Ingredients:
1 tbsp toasted sesame oil
1 tsp hot pepper sesame oil (optional)
2 cups shredded Napa cabbage
1 medium sweet onion, thinly sliced
1 cup julienned carrots
1 bunch scallions, cleaned and sliced
1 tsp tamari or soy sauce
1 tbsp black sesame seeds
(You can substitute the common variety of sesame seed)
-In a hot pan, sauté onion in 1 tbsp toasted sesame oil until seared, about 2-3 minutes
-Add cabbage and carrots, continue to stir until it begins to wilt, but are still crispy
-Fold in scallions and tamari, heat through and serve
-Garnish with hot pepper sesame oil and sesame seeds
