A lightened up version of a classic – big on flavor, low on calories.
Serves 6
3# Boneless skinless organic chicken breasts
1c peeled garlic cloves, chopped, or pulsed in food processor
1c minced flat leaf Italian parsley
1/2 tsp sea salt
1 tsp fresh ground pepper
1c good Parmigiano Reggiano cheese, grated
2 fresh lemons
Drizzle of good olive oil, or spray such as Misto*
-Preheat oven to 300 degrees
-Arrange chicken breasts in large baking pan
-In a bowl, mix garlic, parsley, salt, pepper, and cheese
-Top chicken with parmesan, parsley, garlic mixture, distributing evenly
-Squeeze 1 1/2 of the lemons over chicken, then drizzle with olive oil
-Bake uncovered for one hour
-Squeeze remaining 1/2 lemon over chicken before serving
*I like to use a Misto to spray oil instead of commercial aerosol spray oils. You can use your own good quality oils, and control the calories and fat.
