Wash and dry your strawberries
Chop your chocolate, or use chocolate chips. I like Trader Joe’s Organic 73% Cacao Dark Chocolate.
Heat chocolate gently over a double boiler. The double boiler method (placing a stainless steel mixing bowl, or another pot, over a pot with about 1″ of gently simmering water, will prevent the chocolate from burning. Once melted, remove from heat. You can dip about 50 strawberries in 10 oz chocolate.
Line a pan with parchment paper for the dipped berries to set, and to prevent sticking. Insert a wooden skewer through the stem end of the strawberry before dipping. The strawberries will get heavy with chocolate, and the stem may break before you can get the it to the parchment.
Let set up in the refrigerator for about 30 minutes, or until a crunchy shell is formed. If the strawberries are cold, they will set up quickly.

Tips:
Strawberries must be VERY dry. In fact, even a drop of water in your chocolate will cause it to crystalize and seize up.
Dark chocolate should be at least 72% cacao to get the cardiovascular benefits.
Any fruit, or pretzels will work with this recipe.
