Try this Cucumber Raita made with Greek yogurt, a natural source of probiotics, to keep your gut healthy.

Tapas with Cucumber Raita, Baba Ganoush, Mixed Olives, Grilled Herbed Flatbread, and Aged Gouda

 

Cucumber Raita

10oz nonfat sugar free Greek yogurt

1 tsp ground cumin

Pinch salt

Juice of 1/2 lemon

1 medium clove garlic, crushed or finely minced

1/2 small red onion thinly sliced

1/2 English cucumber, skin intact, grated

1/4 cup chopped fresh dill

 

Place yogurt in a bowl, whisk in cumin, salt, lemon, and garlic.  Stir in remaining ingredients and you’re done!

 

This can be served as a dip, as a sauce for grilled chicken, pork tenderloin, or lamb, on poached salmon, or as a condiment for sandwiches.  Here it is shown as part of a light tapas served with grilled herbed flatbread.  It tastes better the second day, and holds well for about 5 days.
