This moist, fudgy delicious treat is naturally sweetened with Mejool dates, which are high in fiber, potassium and iron.
The unsweetened cocoa powder contains antioxidants that lower blood pressure.
Once the ingredients are assembled, they take just a quick whirl in the food processor before rolling into balls, and voila!
From Dr. Dean Ornish’s UnDo It Program to reverse heart disease:
1c pitted Mejool dates, lightly packed, about 9 or 10 dates
1/2 cup unsweetened dark chocolate cocoa powder, plus additional 2 tbsp for rolling truffles
Pinch fine sea salt
1 tsp good vanilla
1/8 tsp ground cinnamon
Pinch ground cayenne pepper
-Pick through dates and make sure there are no pits
-Place all ingredients in the food processor with the chop blade, and pulse until the dates are chopped (remembering to reserve 2 tbsp additional cocoa powder for rolling truffles)
-Then run food processor and continue to blend until mixture forms a ball
-It should be the texture of undercooked brownie
-If the mixture remains crumbly, and does not form a ball by about 30 seconds, add a sprinkle of water and process again until a ball forms, adding more water if needed
-Roll into 12 equal balls, about the size of a small ping pong ball, then roll in 2 tbsp cocoa powder to coat, and serve
