This moist, fudgy delicious treat is naturally sweetened with Mejool dates, which are high in fiber, potassium and iron.
The cocoa powder contains antioxidants that lower blood pressure. Once the ingredients are assembled, they take just a quick whirl in the food processor before rolling into balls, and voila!
From Dr. Dean Ornish’s UnDo It Program to reverse heart disease:
1c pitted Mejool dates
1/2 cup dark chocolate cocoa powder, plus additional 1/4 cup for rolling truffles
Pinch sea salt
1-1/2 tsp good vanilla
1/4 tsp ground cinnamon
1/8 tsp ground cayenne pepper
-Pick through dates and make sure there are no pits
-Place all ingredients in the food processor with the chop blade, and pulse until the dates are chopped (remembering to reserve 1/4c cocoa powder for rolling truffles)
-Then turn processor and blend on until mixture forms a ball
-It should be the texture of undercooked brownie
-If the mixture is crumbly and does not form a ball by about 30 seconds, add 1 tbsp water and process until a ball forms, adding more water if needed
-Roll into 12 equal balls, then roll in cocoa powder, and serve
