Fresh Spring Peas with Mint and Feta

Serves 4

Fresh peas are fleeting. Choose medium pods. Break pod open to shell – peas should be small, firm, and sweet to the taste. Store in the frig in the veggie drawer, and use within days of purchase. Buy in bulk, shell, blanch, then freeze peas to enjoy through the year. Toss in salads and pasta dishes, or sauté with shallots and prosciutto for a quick week night meal.

2 cups fresh shelled peas

1 small clove garlic, crushed

2 green onions, thinly sliced

1 tbsp grated lemon zest

Juice of 1/2 lemon

1/4 cup fresh mint, chopped

1 tbsp good olive oil

Salt and pepper to taste

2 oz good feta cheese, crumbled

-Boil peas in salted water until heated through, but firm, about 2 minutes, then drain

-Meanwhile, combine remaining ingredients in medium bowl

-Drain peas, and toss with remaining ingredients while still hot

-Serve as a side with lamb, chicken, or fish, or spoon over greens for a light meal
