How Do I Cook Forbidden Black Rice?
If using an electric cooker, use the same setting you would use for brown rice, and the same amount of water, plus a pinch of salt
If you are cooking on the stovetop, you will need 2 cups of water per each cup of rice, and boil on the stove for a minimum of 30 minutes, but it may take up to 60 minutes

Forbidden Coconut Purple Rice
Ingredients
- 1 cup forbidden rice
- 1 15 oz can lite or reduced fat coconut milk
- 1 cup water
- Generous pinch of sea salt
- ½ cup slivered almonds
- ½ cup chopped scallions optional
Instructions

Rinse rice in strainer, and add to medium size pot with lid

Add coconut milk, water, and sea salt

Bring to a boil, then reduce to a low simmer

Cover and simmer low for 30 minutes, or until liquid is mostly absorbed, stirring occasionally

Remove from heat, and allow to stand covered for 10 minutes

Fluff with fork, and garnish with slivered almonds and chopped scallions (optional)
