Turkey Chili with White Beans In a crock pot set to high, add: 2 large onions chopped 2 large cloves garlic chopped 3 green peppers chopped 2 red peppers chopped 2 teaspoons salt 1 tbsp each chipotle chili powder and smoked paprika 2 tbsp ground cumin 1 bay leaf 5 sprigs fresh oregano 3 tbsp olive oil Cook 2 hours, turn crock pot to low, then add: 1 lb lean ground turkey 2 – 19oz cans of cannellini beans drained and rinsed 1 – 28oz can diced tomatoes not from concentrate (I like Cento) 2 tbsp of your favorite barbecue sauce (I like Trader Joes) 2 tbsp blackstrap molasses Cook 2 hours more, adjust seasonings if needed, and serve over whole grain pasta or brown rice
