This Halloween, don’t toss those pumpkin seeds.
Try this simple 3 ingredient recipe, and enjoy with some spiced wine while admiring your carved creations.
Pumpkin seeds are an excellent source of plant protein and fiber (including phytosterols that lower bad cholesterol), as well as unique antioxidant phytonutrients, and are high in minerals like zinc and copper.
Ingredients:
Seeds from 1 large pumpkin (about 2 cups)
1 tbsp Old Bay Seasoning*
2 tbsp good maple syrup, or agave
-Preheat oven to 300 degrees
-Rinse and dry pumpkin seeds, making sure they are free of pumpkin flesh
-In a bowl, toss seeds with Old Bay and maple syrup
-Lay in a single layer on a parchment covered baking sheet
-Roast approximately one hour, tossing every 15 minutes, or until carmelized
-Serve immediately, or allow to cool before storing
*Old Bay is traditionally used for seafood but lends well in many dishes such as potato salad, French fries, soups, and dips. I use it for my sweet potato fries, and it has the perfect balance of salt and spice to bring out the sweetness in the fries.
No pumpkin this year? No problem. Use store bought seeds, shelled or unshelled. If unshelled, cooking time will decrease to about 1/2 or less.
