Roasted Garlic Lemon Broccolini

This is a twist on a traditional broccoli lemon garlic salad served as a side dish in the Italian Christmas Eve 7 fishes dinner. Here, broccolini is substituted for broccoli, and is oven roasted, not steamed like the traditional salad. The acid in the lemon will "cook" the raw garlic, so it should not be too garlicky when you eat it.

Ingredients

  • 1 bunch broccolini washed, ends trimmed
  • 1 tsp EVOO
  • Juice of half a lemon
  • 1 clove garlic crushed
  • Generous pinch of salt

Instructions

  1. Preheat oven to 350 degrees
  2. Place broccolini in a single layer on a baking pan, and drizzle with olive oil
  3. Roast in oven until florets begin to crisp, and stalks begin to soften but are still firm
  4. Remove from oven, evenly distribute crushed garlic and lemon on broccolini
  5. Sprinkle with salt, and serve at room temperature
